All applicants should have a minimum of 5 years experience in the meat trade, particularly fresh meat including the ability to break down a full carcass and use a bandsaw. Preference will be given to those candidates who have a proven ability to prepare and display fresh meat with a strong emphasis on personal counter service. Knowledge of fresh fish and European cheeses along with a background in prepared and value added products would also be desirable.
